Meal Prep #1 - Cold Sesame Noodles
I've learned I can't just fly by the seat of my pants with meal prepping. I need to plan, and think about what I would actually like to eat. I mean, one can only eat so many salads before they want to let Peter Cottontail in to the patch to eat Mr. McGregor's veggies so you don't have to.
I as any good woman, turned to Pinterest for inspiration and recipes. I have a board specifically for meal prepping (I also have one for booze and desserts, don't think I'm some sort of saint). Like previously said, I start scrolling the week before to see if I can come up with something different from the previous weeks and something that will satisfy any craving that I may have. If you know me at all, I can eat any type of Asian food, any day, any time. I love it all. So when I came across this little gem, I knew in my heart of hearts I was going to be happy with it! Cold Sesame Noodles!
This is my first time visiting Denise over at Sweet Peas and Saffron. I can tell you, it won't be my last. Her whole site is devoted to meal prepping and healthy meals at that! She has breakfasts, snacks, lunches, and dinners! So if you're stuck in a rut, pop on over to her site and grab you some ideas! You won't regret it!
Okay, so I did tweek her recipe a bit. I've learned that ginger stays with me a little longer than a person would like, so I omitted the ginger from the dressing, and it still tastes amazing! The best part about this, is all I had to cook was the noodles! I don't own a spiralizer (I know, I know, it's like the must have millennial kitchen gadget), but lucky for me, my Publix sells already spiralized veggies in their fresh produce section! SCORE! Seriously, all I did for this week was, boil water, open a can of garbanzo beans, whisk together a dressing, and then portion it out! EASY PEASY!

Above you have my finished product. Obviously I have the same level of photog and plating skills as Denise right? I did add a wedge of lime to squeeze over it to add a fresh little pop to the dish. Finally the last awesome thing about this meal, is you don't heat it. It's meant to be eaten cold! That means you could literally take this anywhere and still enjoy it!
